Gather all ingredients and plug in the George Forman Grill.
Chop up the green bell pepper, yellow onion, and curly kale into medium size pieces.
Add the chopped vegetables to a pan and stir-fry on medium to high heat until browned.
While the vegetables are cooking, sprinkle chili powder, ground cumin, red chili flakes, cayenne pepper and pink Himalayan salt to taste.
Take one whole wheat pita bread, add slices of the plant based cheddar cheese and stir fried vegetables.
Fold the pita in half and place on the George Forman Grill closely the top lid carefully.
Allow the pita to cook for about 3-5 minutes or until the quesadilla is toasted and the cheese is melted.
Once done, cut the quesadilla in half or into the number of slices you desire.
Serve with a side of salsa verde. Enjoy.
