Add the rice wine vinegar, coconut sugar, and Himalayan pink salt to a small bowl and stir until dissolved.
Sushi Rice
Rinse and drain sushi rice well. Water should be clear and not cloudy.
Add the rinsed sushi rice to the crock pot and cook using the rice, high pressure, and high temperature settings. The rice will take about 12-15 minutes to cook (depending on your crockpot abilities).
Once complete, allow the rice to sit for 10 minutes.
Fold the sushi dressing in the rice and use immediately.
