Delicious Vegan Pancakes
These vegan pancakes are so underrated. They are easy and quick to make requiring only six ingredients. Prepare yourselves for a wow moment when you experience the fluffiness and buttery crispy edges. So delicious and healthy for you at the same time.

- 1 1/2 cups Whole Wheat Flour
- 1 tbsp Baking Powder
- 1/2 tsp Pink Himalayan Salt
- 1 cup Coconut Milk
- 1/2 cup Water
- 2 tbsp Light Brown Sugar
Mix the flour, baking powder, salt and brown sugar in a large mixing bowl.
Add the coconut milk and water to the bowl and stir until all ingredients are well combined.
Heat skillet on medium to high heat (7 on a scale of 1 to 9). Add vegan butter to the pan for an extra nonstick coating as well as buttery pancakes.
Pour batter into skillet to form a small, medium or large pancake accordingly.
Allow to cook on one side for about 2-3 minutes or until most bubbles formed on top are all popped.
Flip pancake with spatula and allow to cook for about 2 minutes or until brown.
Serve with your favorite toppings and enjoy! I highly recommend vegan butter with 100% maple syrup. So delicious.
- The brown sugar was a game changer for me because it makes the pancakes fluffy and adds the perfect browning and crispy edges. It is not a lot of it required either.
- Notice that no oil is required for this recipe. It is absolutely delicious without oil but the oil would be one of the substitutes for butter which can make it more moist. However oil is not needed because the pancakes are already moist.
- Feel free to store extra batter in the fridge or freezer for later use.
