Today, I am going to show you how to make a curry vegan banana split. It can be frustrating finding easy to make and AMAZING tasting vegan recipes. But fret not. In this recipe post, I am going to show you exactly how to make this curry vegan banana split.

What is a curry vegan banana split?

Curry vegan banana split is curry of your choice poured over a split plantain. That’s it. When I tell you it is so delicious!

For example, it is savory, sweet, salty, spicy, and sensational. You can control the salt and spice levels but the sensational part is thankfully uncontrollable.

Everyone that tried it loved it.

Now that you understand what a curry vegan banana split is, it’s time for me to walk you through how to make it.

First step:

Take a large ripe sweet plantain. You can identify ripe and sweet by it’s deep yellow skin color. If it is green then do not use for this recipe. The green plantains are better for making chips like these.

Second step:

Peel the plantain and make a slit down the middle lengthwise. The slit can be a 1/2 to 3/4’s into the plantain.

Third Step:

Massage it (or rub gently) with olive oil, Pink Himalayan salt, and ground pepper.

Fourth Step:

Wrap the plantain firmly in aluminum foil.

Fifth step:

Bake in oven on 400 degrees F for 30 minutes. Remove from oven when complete and carefully unwrap and open the slit to hold the curry.

Finally step:

Pour curry like this amazingly delicious vegan coconut chickpea curry down the open slit of the plantain. Be generous :). Add a slice of lime to garnish and for a citrus blast of flavor that will make you shake your head in astonishment.

This video was before I tasted this dish. Good thing because I was speechless after tasting it. My eyes told it all though.

Here are my favorites for plantains:

  • has a low glycemic index (it’s in the 40s) which is great news for diabetics as it helps regulate your blood sugar.
  • excellent digestion support thanks to being a great source of fiber and resistant starch that goes straight to the large intestines feeding the good gut bacteria.
  • rich source of potassium (has more than bananas) which helps regulates your blood pressure. Neutralize the effect of salt on your blood pressure with plantains.

It all made sense after the first bite. My mind went back to my many trips to KG’s African – American & Caribbean restaurant in Garden City, MI. I would always get the goat curry with plantains. Equipment

  • Oven
  • Aluminum Foil

Ingredients
  

  • ▢ Yellow Plantain – 1 large
  • ▢ Curry – ¾ cup
  • ▢ Olive Oil – 1 tsp
  • ▢ Pink / Black Himalayan Salt – ⅛ tsp (or sprinkle to taste)
  • ▢ Ground Black Pepper – ⅛ tsp (or sprinkle to taste)

Instructions
 

  • Prep oven at 400℉.
  • Peel the plantain completely.
  • Slit the sweet plantain down the middle lengthwise.
  • Rub the olive oil, salt, and pepper on the outside of the plantain.
  • Roll the plantain into the aluminum foil.
  • Bake on 400℉ for 30 minutes.
  • Remove the plantain from the oven.
  • Unwrap the plantain and place on a plate.
  • Carefully open the plantain and pour the curry in the slit from top to bottom.
  • Serve with lime & Enjoy!

Notes

  • You can use a curry with meat.
