The Best Easy Vegan Quesadilla for the Perfect Snack

Ola my friend! This super simple vegan quesadilla is a game changer for the ‘out of no where’ munchies. It is perfect for lunch, dinner or a light snack. It is bursting with flavor, crunchy to the max and easy to make. You can even make a breakfast version of this vegan quesadilla. So yummy!

I used the George Forman Grill to make this quesadilla and fell in love with making it this way. The quesadilla was cooked evenly and in a matter of minutes. This grill is so convenient and easy to use and clean. It is a must have in my home. I love my George Forman Grill.

Vegan Quesadilla Ingredients & Prep

  • Whole Wheat Pita Bread
  • Plant Based Cheddar Cheese
  • Green Bell Pepper
  • Yellow Onions
  • Curly Kale
  • Chili powder
  • Ground Cumin
  • Red Chili Flakes
  • Cayenne Pepper
  • Pink Himalayan Salt
  • Salsa Verde (Green Salsa)
  1. Gather all ingredients and plug in the George Forman Grill.
  2. Chop up the green bell pepper, yellow onion, and curly kale into medium size pieces.
  3. Add the chopped vegetables to a pan and stir-fry on medium to high heat until browned.
  4. While the vegetables are cooking, sprinkle chili powder, ground cumin, red chili flakes, cayenne pepper and pink Himalayan salt to taste.
  5. Take one whole wheat pita bread, add slices of the plant based cheddar cheese and stir fried vegetables.
  6. Fold the pita in half and place on the George Forman Grill closely the top lid carefully.
  7. Allow the pita to cook for about 3-5 minutes or until the quesadilla is toasted and the cheese is melted.
  8. Once done, cut the quesadilla in half or into the number of slices you desire.
  9. Serve with a side of salsa verde. Enjoy.

Notes

  • Regular salsa works well too.
  • A side of avocado slices or guacamole works wonder.
  • Customize this quesadilla anyway you want to make it your own.
