Vegan Season May 2024 Recap | And Here’s What Happened

Ola my friend! May 2024 vegan season was almost a blur. I officially transitioned to my vegetarian season the last week of May. I am not sure how I feel about this. I am a little sad and happy lol. I still eat mostly vegan. However, there were a couple of delicious apple fritters that found me and I know they are not vegan. But I will make vegan apple fritters in the future. I am so excited to try this because I love a good crunchy soft melt in your mouth apple fritter. So much sugar I am sure but I promise to make it healthy and delicious.

I managed to meal prep all of May except for the last week. Meal prepping every week has been an enormous weight off my shoulders and bank account. It’s a relief to be able to save time, effort, money, emotional energy, and mental equity.

Memorial Day Weekend

I didn’t take any pictures but here’s a snapshot of what I ate:

Memorial Day

  • Potato salad (it had egg in it and just non-vegan for sure but I enjoyed every bite and had 2 large servings)
  • Baked beans (my absolute favorite bbq side dish. I was so good and I had 2 large servings)
  • 3-4 Peanut Butter Cookies (make you shake your head so good)
  • Dill pickles
  • Watermelon
  • Oranges
  • A tiny taste of Pineapple Crunch Pound Cake

During the week

  • Fruit
  • Chips (vegan)
  • Cookies (vegan)
  • Apple fritters

Friday
