Vegan Season March 2024 Recap | And Here’s What Happened

Ola my friend! March 2024 vegan season was pretty good. There was a lot of experimenting which is always fun. This month I explored (just a little) having a variety of foods in one week instead of having only one dish. I’ll admit the pineapple jalapeno pizza and split pea soup wasn’t the best combination but it worked out. I was desiring pizza but also knew that meal prepping split pea soup was good too. I needed the protein lol.

Meal prepping every week has been a ginormous weight off my shoulders and bank account. It’s a relief to be able to save time, effort, money, and mental faculties.

Comments / Hacks / Tips

  • The poblano pepper stir fry will not have broccoli in it next time. I’m exploring and absolutely NO broccoli next time in my poblano pepper stir fry.
  • Split pea soup can be frozen for later. When ready to reheat, allow to thaw for at least 10 minutes before microwaving or putting in the oven.
  • The start of week #5 was the end of a particular fast I was on. I highly recommend that you have a light salad anytime you are ending a fast. It is the best way to end a fast. I had split pea soup and that was ok. However, the best way to end a fast is eating a salad.
