Ola my friend! Vegan Season 2024 is off to a great start. Honestly, I feel I have been indulging a bit too much. It’s all vegan but it is so delicious. Every week new ideas pop into my mind and I put it on the list to prepare. Having a variety of meals vs one meal during the week is the next challenge. But first things first. Meal prepping one main meal every week has been a fun and exciting adventure. Every week even I look forward to what will end up on the menu!

  • use sweet potato glass noodles instead of Linguine durum wheat noodles next time I make Japchae
  • freeze rice and quinoa in ziplock baggies for meal prep
  • it was my first time trying overnight oats. I decided to use coconut water trying to be too healthy and because I couldn’t find the coconut milk that I wanted. I did not like the overnight oats. I am going to give it another shot soon but with coconut milk that I prefer (yes I finally found it).
