Ola my friend! I nearly shed tears of joy eating every bite of this baked salmon Valentine’s Day dinner. I was so excited preparing this lemon pepper baked salmon, steamed garlic butter redskins potatoes and seasoned roasted asparagus! Any glance of any dish had my mouth watering causing me to keep swallowing ????.

Baked Salmon Seasoning Ingredients
- Lemon Pepper
- Himalayan Black Salt
- Ground White Pepper
- Olive Oil
- Lemons
Garlic Butter Red Skin Potatoes Seasoning Ingredients
- Minced Garlic
- Himalayan Black Salt
- Ground Black Pepper
- Vegan / Plant Butter
- Olive oil
Roasted Asparagus Seasoning Ingredients
- Himalayan Black Salt
- Ground Black Pepper
- Garlic Powder
- Onion Powder
- Olive Oil
Instructions
For the baked salmon
- I love to bake the salmon while frozen and on high heat (450 degrees fahrenheit ????). Place the frozen salmon in the pan and sprinkled a little olive oil. Chop one medium-large yellow onion and place them on the side of the salmon.
- Season the salmon with generous sprinkles of lemon pepper, Himalayan black pepper, and ground white pepper.
- Don’t forget to slice three thin slices of lemon, cut in half and place directly on top of the salmon.
- Finally, pour a little distilled water in the pan with the salmon and cover the pan with aluminum foil. This way the steam does a lot of the work leaving the salmon super moist and tender.
For the garlic butter redskin potatoes
- I totally allowed my taste buds to lead the way. I knew I absolutely needed garlic. Wash and chop around 6-7 small redskin potatoes into cubes of four or six. I put them in my faithful and beloved crock pot. You have to try this method.
- Coat the redskin potatoes with maybe 3-4 teaspoons of minced garlic. I love love minced garlic.
- Next sprinkle black pepper and Himalayan black salt to taste. Then add maybe 2-3 teaspoons of vegan butter and a little olive oil.
- After adding a little distilled water, I selected the steam setting on the crockpot and allowed the wonders to occur in the crockpot.
For the roasted asparagus
- Wash and rinse the fresh asparagus (so happy I got them at a great price – .99 cents/lb!).
- Then massage a little olive oil and sprinkled garlic powder, onion powder, ground black pepper, and Himalayan black salt.
- Wrap the asparagus directly in aluminum foil and placed them in the oven on high heat.
- To top things off, I prepared my infamous sweet brown glaze for the salmon. I especially like to use this sauce when preparing blackened salmon in the skillet.
- Optional: crumble pecans and sprinkle on top of the salmon after serving
Note: You may not want to be starving when preparing this meal because you will want to rush but do not fall for that temptation. Take your time and eat maybe two almonds to hold you over :).

Meal Inspiration
It was the Sunday before Valentine’s day and a young lady that I mentor wanted to “hang” out with me after church. I am l like excuse me? I told her I would think about it and let her know.
As I thought about it, I realized that this would be a great opportunity to make a nice meal and share it with someone else while our bodies both thanked us for being so loving. She definitely hyped me up once learning that baked salmon was my dinner idea. She swiftly scrapped the idea of getting a $5 Hot N Ready Pizza from Little Cesars. Sorry no Little Cesars when hanging with me!
Like I said earlier, she was my hype man the entire preparation process which made the time go by faster. She was starving and was surviving off of the aroma until the food was finally done. I was delighted to see her taste the baked salmon, garlic butter redskin potatoes and roasted asparagus uttering sounds of approval as she savored each bite. But I think she inhaled her food after tasting the first few bites.
