TWO Surprises When You Make Vegan Peanut Butter Cookies

Ola my friend! You may never ever buy peanut butter cookies from the store again. These vegan peanut butter cookies will make you shake your head in wonder. There are only four quality ingredients in this recipe: flour, peanut butter, maple syrup and salt. The fifth ingredient is optional if you want the cookies to melt in your mouth even more: plant butter.

These cookies made a believer out of me. Vegan desserts can be quick, inexpensive, healthy and delicious. I could not believe how good these cookies turned out. Vegan Peanut Butter Cookies Ingredients & Prep

  1. Pour flour, peanut butter, maple syrup and salt into a bowl
  2. Mix well with a spoon. The mixture should be smooth with no lumps.
  3. Scoop the batter per your preferred size cookies and place them on wax / parchment paper (oven safe)
  4. Lightly mash with a fork to create the infamous criss-cross pattern normally found on homemade peanut butter cookies.
  5. Bake the cookies on 350°F for 10-15 minutes or until golden brown

Notes

  1. Using peanut butter that is room temperature is better because it makes the batter easier to stir. Let the peanut butter sit for while to soften if it was refrigerated.
  2. Use flour on the fork to create the criss-cross pattern more easily.
  3. Massage plant butter into the dough as you are placing them on the cookie sheet. The cookies with be even softer when done baking.
  4. You can test if the cookies are done by sticking a fork or knife in the middle. If it comes out clean then it is ready.
  5. Feel free to add less or more of any of the ingredients per your discretion and desired tastes. Tasting the batter can be helpful in guiding you on this matter.

My favorite for peanut butter:

  • Fantastic source of protein, omega-6, oleic acid and copper (among others). Oleic acid is a healthy fat that supports and manages blood sugar, blood pressure and cholesterol very well.
  • It can help you lose weight because you feel full and do not want to eat as much
  • Rich source of phosphorous and niacin which produces energy

Now for the Two Surprises

#1: The cookies are moist, soft and chewy as-is. Try adding the plant butter and you have ultra soft chewy moist cookies that melt in your mouth literally. I like to roll my cookies into a ball before slightly flattening and printing the criss-cross effect with a fork. While rolling the cookies into a ball, I add the vegan butter rolling it throughout the cookie. Eating the cookie will make you feel like surrendering your will completely. You may not be able to just eat 1, 2, or 3 cookies in one sitting.

#2: Leave the cookie dough unbaked and you have the best filling for homemade vegan peanut butter chocolate cups. They are better than Reese’s peanut butter cups on so many levels and by large margins. Stay tuned for more details in a future post coming soon!
