Ola my friend! April 2024 vegan season started out rough but ended AMAZING! Most of the meals were protein packed. I was inspired to make homemade black bean burgers which were so delicious. Then the leftover black bean mixture turned into a giant black bean burrito that tasted so good. One of my dear sisters made an AMAZING kale salad and gave me a big bowl full. I could not stop eating this kale salad. Every attempt to save some for the next day were so feeble however, I managed to reserve some for the next day. When I say AMAZING.
Anyway, meal prepping isn’t easy and some weeks I had to start a day after my normal scheduled day. However, meal prepping every week has been an enormous weight off my shoulders and bank account. It’s a relief to be able to save time, effort, money, and mental faculties.
