The vegetables and cajun seasoning wonderfully infuses the coconut milk. Then mixing in the cheese takes the creamy sauce to another level of goodness. The pasta can’t help but to taste amazing. You may not be able to understand why this pasta taste so good but no worries … just enjoy every bite.
Vegan Cajun Pasta Background Story
Ok quick story of how I ended up making the best vegan cajun pasta. I hosted one of my brothers over the 2022 end of year holiday season. We decided that I would make stuffed salmon with a side of asparagus for the meal. It was a simple menu but bound to be so delicious. For some reason, I was not able to find salmon. My local go-to spot was all out. I informed my brother who was more than willing to pick it up for me.
Well the day before, turns out that the store he ordered from was also out of stock. The stores were closing early being it was the holidays and I knew that I had to come up with something just as good fast! I jokingly told my brother, “Welp this will be your first vegan holiday, haha.” He wasn’t too thrilled.
Long story short. After taking a couple of bites of pasta, my brother literally said, “We don’t need any meat”. He refused to be recorded saying this but it’s all good. I am just happy that he loved loved this vegan cajun pasta!

Vegan Cajun Pasta Ingredients & Prep
▢ Country Crock plant butter – 4 tbsp
▢ Minced garlic – 1 tbsp (don’t have to top it off)
▢ Yellow onion – 2 medium
▢ Red onion – 1 medium
▢ Green bell pepper (capsicum) – 2 medium
▢ Himalayan Pink Salt – 1 tsp (less or more to taste)
▢ Cajun seasoning – 4½ tbsps
▢ Unsweetened coconut milk – 4½ cups
▢ Vegan Parmesan cheese – 1½ cup
▢ Fettuccine pasta – 1 lb
▢ Dairy Free Mozzarella Style Vegan Cheese (optional)
- Gather all ingredients, a large frying pan or skillet, a large pot, a chopping board, a basic chef knife and a mixing spoon.
- Preheat your oven to 350°F.
- Wash and rinse all vegetables well.
- Add water and a little Pink Himalayan salt to the large pot and place on high heat.
- Add the pasta to the pot once the water starts boiling.
- Allow pasta to boil for 8-10 minutes. Turn off the heat and allow the pasta to sit in the water until ready to add to the cajun sauce. (You can also opt to pour the pasta in a strainer to drain the water and set aside until ready to add to the cajun sauce.)
- Add the plant butter, minced garlic to the frying pan and allow to simmer over low heat.
- Next, add the yellow and red onions and bell peppers to the pan. Sauté on medium to high heat (7 on a stove number setting 1 to 9) for around 7 -10 minutes or until slightly brown.
- Add the Himalayan pink salt and the cajun seasoning to the pan stirring slightly to coat all of the vegetables.
- Pour the unsweetened coconut milk slowly into the pan, stirring slowly as all of the ingredients mixes together.
- Mix in the vegan parmesan cheese and vegan mozzarella cheese. Let the cajun sauce simmer for a couple of minutes.
- Add the cooked fettuccine pasta to the cajun sauce and stir well for a couple of minutes.
- Sprinkle vegan mozzarella cheese and vegan parmesan cheese on top of the pasta.
- Put the pan of vegan cajun pasta in the oven and allow to bake for around 10 minutes.
- Serve with a side of salad and garlic butter bread sticks. Enjoy!

- You can adjust the amount of pepper spices per your preferences.
- Another good plant butter is Flora Unsalted Brick Plant Butter found at Krogers.
- The Italian seasoning can be any brand as most brands are good. Just make sure there’s no salt added.
