A Powerful Mango Kale Salad For Your Next Detox

Ola my friend! Are you craving a body reset? Maybe you have been craving leafy greens but you just did not know what to do. Here’s another vegan salad idea you can try. This mango kale salad will wow you because it is so light, fresh, healthy, and flavorful. Kale and mangos popped into my mind one day after torturing my body with some foods I should not have eaten. This salad actually gave my body a rest and got it back on track. It was a relieving experience. Of course I paired this with good exercise and quality sleep. Remember you are what and when you eat. Mango Kale Salad Ingredients and Prep

  • Kale (1 bunch)
  • Roma Tomatoes (5 small)
  • Red onion (1 small)
  • Yellow onion (1 medium)
  • Cucumber (2 medium)
  • Mango (1 mango)
  • Almonds (optional)
  • 100% Olive Oil (optional)
  • Fresh Lemon (optional)
  • Lemon Pepper Seasoning (optional)
  • Honey (optional)
  • Pink Himalayan Salt (optional)
  1. Wash and rinse all vegetables well.
  2. Chop up the kale as finely as possible.
  3. Cut up all remaining veggies into small pieces.
  4. Mix all veggies in a large bowl.
  5. Add olive oil, fresh lemon juice, lemon pepper seasoning, honey and salt to a separate small bowl and stir until a dressing forms.
  6. Pour dressing over salad and mix well.
  7. Cut mango into chunks and top the salad generously.
  8. Add almonds on top and serve immediately or put saran wrap on top of the bowl and chill in the fridge.

Notes

  • Always feel free to adjust the ingredient portions per your preferences and dietary goals.
  • Soak the onions in water before cutting into smaller pieces if you cannot tolerate tearing up.
  • The dressing is totally optional. If you decide to include the dressing then be sure to taste the dressing as you add ingredients until you get your desired taste.
  • Try to get a ripe mango that is more firm than soft.
