Make Homemade Vegan Vanilla Ice Cream | 3 Simple Ingredients

Ola my friend! You will probably at least question buying ice cream from the store after making this homemade vegan vanilla ice cream. I am 97% confident that I will not ever buy ice cream from the store again. I was so pleasantly surprised that this ice cream turned out so well.

You may think that ice cream need to be a certain brand in order to be good. First, I must admit that I am not an ice cream lover. I prefer sorbet or popsicles over ice cream any day. Outshine Real Fruit Bars (sugar free) are still one of my favorites. However, every now and then I would have an ice cream attack where ice cream is what I want and what I want now lol. I would eat to my full and then don’t desire it for several seasons. I can go a whole year or more without eating ice cream.

Store-Brought Ice Cream

When I did eat store-bought ice cream, my favorite brands included Turkey Hill, Talenti, and Kroger’s private selection. I later upgraded to Alden’s Organic ice cream brand. Alden’s seemed to be the healthiest out of all the brands. I have tried vegan brands like So Delicious Dairy Free Frozen Dessert but it is NOT for me. I’m not sure if I am interested in trying any other dairy free brands yet. There seem to be many brands out there and the list is growing – yikes! On that note, Halo Top ice cream ads are so annoying to me lol.

Ok I will have to write separate posts about ice cream reviews later. For now let me show you my number #1 favorite ice cream. It is homemade and wows me. It tastes so good. I am so grateful. The great news is that you do not need a lot of ingredients or fancy equipment (i.e. ice cream maker) for this. The other important news is that this requires lead time depending on how firm you want the ice cream. I recommend at least 8 hours. Do you have a deep freezer? Even better! Ready for this? Ok let’s try this!

Homemade Vegan Vanilla Ice Cream Ingredients & Prep

  • Coconut milk (100% / Organic)
  • 100% Maple syrup
  • 100 % Vanilla Extract
  • Almonds + sprinkles of Pink Himalayan Salt (optional)

Method #1

  1. Pour all ingredients in a bowl
  2. Stir until well combined
  3. Freeze in freezer for at least 8 hours
  4. Add frozen ice cream to blender and blend until smooth
  5. Freeze in freezer for an additional 8 hours or until firm per your preference

Method #2

  1. Freeze coconut milk by itself first
  2. Blend frozen coconut milk with maple syrup and vanilla extract until smooth
  3. Freeze for minimum 8 hours or until firm per your preference (optional)

Notes

  1. Leave the post blended ice cream in the freezer longer if you want extra firm ice cream.
  2. Feel free to eat right away once blended if you like soft served ice cream.
  3. Feel free to add almonds or any nuts of your choice.

Here are my favorite for coconut milk:

  • Aid in weight loss: gives your body the good fat MCT (medium-chain triglycerides) which stimulates energy among other great things.
  • Immune system booster: provides the butt kicker lipid, lauric acid which has antimicrobial, antiviral, anti-inflammatory, and anticancer properties.
  • Controls diabetes: improves insulin secretion which breaks down glucose and control blood sugar levels
  • Supports healthy hair and skin: the lauric acid is also known for its ability to penetrate and strengthen hair strands (of course my favorite)

Plans for Next Time

  1. Buy coconuts and make the coconut milk and / or the coconut cream for the ice cream. This would be a dream because imagine fresh coconut milk from coconuts. I guarantee that I will be able to tell the difference. My body is getting exciting thinking about it.
  2. Add vegan brownies, vegan peanut butter cookie dough, and homemade vegan caramel (along with almonds) to the ice cream and freeze. Yes this deserves a name of sorts. It is going to be so good. Omgoodness! I am so excited!!!!!!!!!!!!
  3. How about adding lightly salted pistachios. Omgoodness!!!!!! Yes!!!!! Stay tuned is all I can say for now.
