The Most Wonderful Vegetable Pad Thai Ever!

Ola my friend! Have you ever wanted to make your own Thai food? Here’s a quick page out of my journal on making the most wonderful vegetable Pad Thai ever. Once you have all of the ingredients this noodle dish is easy, fast and jaw dropping delicious.

I will be highlighting the ingredients and the prep for this vegetable Pad Thai. The quantities I used were subjective to my tastes. Special thanks to Nora Cooks Vegan Pad Thai for the guidance, restoring my faith in humanity and boosting my confidence to explore making the foods I love.

Vegetable Pad Thai: Ingredients & Prep

  • 16 oz. Simply Nature Organic Pasta Linguine
  • 2 Carrots (large)
  • 1 Green Bell Pepper (Capsicum)
  • 1 Orange Bell Pepper (Capsicum)
  • 1.5 Yellow Onions
  • 1/4 lb Bean Sprouts
  • 1 tsp Plant Butter
  • 1/2 tbsp Olive Oil
  • 1/2 tsp Sesame Seed Oil
  • 1 tbsp Minced Garlic
  • 1/4 tsp Himalayan Black Salt
  • Peanuts
  1. Add pasta to boiling water and let it boil for 10 minutes.
  2. For the sauce, put sriracha sauce, soy sauce, maple syrup, lime, and rice vinegar in a bowl, stir until well blended, and set aside.
  3. Clean and chop bell peppers (capsicums), onions, and carrots into medium size chunks.
  4. Add minced garlic, sesame oil, olive oil, plant butter to wok (pan / skillet) on high heat.
  5. Add vegetables from #3 in wok and stir fry for several minutes as the onions began to turn brown.
  6. Sprinkle the Himalayan Black Salt on the vegetable stir fry and mix well.
  7. Drain the linguine noodles in strainer and add 3/4s of the noodles to the wok little by little.
  8. Pour the sauce mixture from #2 into the wok. Mix and fold the noodles and vegetables continuously for about six minutes.
  9. Lastly, add the bean sprouts to the wok and mix into the noodles.
  10. Serve with lime slices and sprinkled peanuts on top.

Notes

  • Feel free to substitute peanuts with peanut butter like I did. Absolutely excellent!
  • When prepping the sauce, it is never a bad idea to taste the sauce and add what is needed to get the sauce just right to your liking.
  • Add crushed red chili pepper flakes as desired per your spice tolerance.

This Vegetable Pad Thai can be addicting if you are not careful. Imagine working hard all day, taking a shower and then eating this noodle dish in peace and quiet with a glass of ice cold lime water. So nice.
