Ola my friend! If you ever need a quick protein boost then you must try this vegan split pea soup. This vegan split pea soup is really good to eat year-round and if you want to just explore other soup options. I am not sure where this craving came from but one day I was craving split pea soup. As I pondered this craving, the ingredients to make this soup epic starting pouring into my mind. I really wanted to see if this soup would be good without any meat which is just additional protein and sodium that would be overwhelming in my opinion. So, is it possible? Yes, of course. How? Let’s See!
Vegan Split Pea Soup Ingredients & Prep
- Split peas (1 lb)
- Minced garlic (2 tbsp)
- Plant Butter (2 tbsp)
- Carrots (3-4 sticks)
- Celery (4-5 stalks)
- Yellow onion (1 large)
- Green Onion aka Scallions (1/2 of small bunch)
- Fresh Parsley leaves (your discretion)
- Turmeric (1 tsp)
- Himalayan Pink Salt (1 tsp)
- Black Himalayan Salt (1 tsp)
- Black Ground Pepper (dash)
- White Ground Pepper (dash)
- Trader Joe’s 21 Seasoning Salute (1 tsp)
- Smoked Paprika (2 tsp)
- Rinse peas thoroughly and add to crockpot.
- Next add minced garlic and plant butter.
- Cut up carrots, celery, yellow onions, and green onions into small to medium sized chunks. Add to crockpot.
- Add all seasonings and fresh parsley.
- Pour water to cover all ingredients.
- Select the beans/chili setting with high pressure on the crock pot.
- Serve yourself a nice modest sized bowl of vegan split pea soup and enjoy.
